What water temperature should I use?
Lighter roasts generally want hotter water (93–96°C / 200–205°F) to fully extract their denser, less-developed sugars; darker roasts extract faster and can over-extract into bitterness at the same temperature, so 88–92°C (190–198°F) is more typical.
