Originally developed by the Specialty Coffee Association (SCA) and World Coffee Research (WCR), it helps tasters identify and describe flavors like fruity, floral, chocolatey, and nutty notes. Ethiopian coffees — especially natural-processed beans from Yirgacheffe, Guji, and Sidama — are renowned for the most layered flavor profiles in specialty coffee, often displaying fruity, floral, and berry notes simultaneously. In our 619-coffee database, Sweet appears most frequently, followed by Floral, Caramel, Fruity, Nutty, Citrus, Chocolatey, and Berry. Sweet and chocolatey notes dominate Latin American coffees; fruity and floral notes are the hallmarks of East African (Ethiopian, Kenyan) coffees; nutty and caramel notes are common in Brazilian and medium-roast coffees.

Fruity coffees display broad fruit notes — tropical, stone fruit, or citrus — while berry coffees specifically taste of blueberry, strawberry, raspberry, or blackberry. Berry notes are most iconic in Ethiopian natural-process coffees. Fruity notes are broader and can appear in coffees from Ethiopia, Kenya, and naturally-processed coffees from Colombia or Honduras. Specialty coffee flavor profiles are assessed by Q Graders — certified professionals trained by the Coffee Quality Institute — using cupping protocols established by the SCA. A coffee must score 80+ points on the SCA 100-point scale to qualify as “specialty grade.” The flavor wheel categories map directly to the SCA Coffee Taster’s Flavor Wheel, which organizes 100+ flavor descriptors into hierarchical categories. All 619 coffees in our database come from specialty roasters with Q-graded sourcing.
