About Merit Coffee
Founded in 2009 as Local Coffee by Robby Grubbs and his wife Neesha in San Antonio, becoming one of the city's first multiroaster shops serving Counter Culture and Intelligentsia. In 2015, the team launched Merit Roasting with consulting from coffee writer Scott Rao. The company rebranded to Merit Coffee in 2018 and expanded to Austin. Roasts on custom-built 25 & 45kg Probat roasters from Germany.

Direct relationships with producers, with a focus on repeatable quality and year-round consistency through seasonal coffee rotations.
