From the Manos Juntas micromill in Sotara, operated by exporter Banexport. Producers deliver cherry to the micromill, allowing them to focus on cultivation while Banexport handles post-harvest processing. This lot was fermented in sealed tanks flushed with nitrogen gas to stimulate microbial activity, then dried on raised beds for 30-45 days, creating a fruit-forward coffee with a dense, syrupy mouthfeel.
