What Makes a Coffee Good for a Clever Dripper?
Because the coffee steeps for a fixed time, a Clever Dripper amplifies sweetness and body while muting sharp acidity. Washed light-medium roasts stay clean, and naturals gain a juicy, syrupy character. Heavily fermented lots can turn winey, so we skip them.
Colombia (21 coffees) and Ethiopia (25 coffees) lead the candidate pool. Prefer to pour? Compare with our pour over picks.
How to Brew the Best Cup in a Clever Dripper
Medium-fine grind, about 1:16 coffee to water, and a timed steep.
- Ratio: 1:16, such as 20 g coffee to 320 g water for a mug. Weigh both.
- Grind: Medium to medium-fine, a bit finer than pour over.
- Water: 200 to 205°F for light roasts, 195 to 200°F for darker ones.
- Steep: Add all the water, stir gently, lid on, and steep 2:00 to 3:00.
- Drain: Set it on a mug; the valve opens and drains in about 60 seconds.
