Washed vs Natural Process for Pour Over
Process matters enormously for pour over. The method that works best depends on what you want from the cup:
- Washed (153 in our pour over pool): The classic choice. Fruit removed before drying = clean, bright, transparent. You taste origin and variety clearly — florals, citrus, stone fruit. Ideal for V60 and Chemex where clarity is the goal. Most top-ranked pour over coffees are washed or semi-washed.
- Natural (46 in our pour over pool): Fruit dried intact, adding sweetness and body. Naturals in pour over produce big blueberry, berry, and wine notes with a heavier mouthfeel. Works especially well with the Kalita Wave or Clever Dripper where the flat-bottom design softens the intensity.
- Anaerobic: Sealed fermentation = intense and unusual. Anaerobic pour over coffees (like our #2 pick, Onyx's Rwanda Muhororo) are high-risk, high-reward — tropical fruit and wine complexity that's unlike anything else. Recommended for adventurous palates.
