How to Brew Natural Process Coffee
Natural coffees reward careful brewing. Their denser fruit-sugar content means they extract slightly differently than washed coffees — here's how to get the best from them:
- Pour Over (V60 / Chemex): The best method for showcasing Ethiopian naturals. Use slightly cooler water (88–90°C instead of 93°C) to avoid over-extracting the intense fruit sugars — this keeps the blueberry and cherry notes bright rather than jammy. Try a 1:15 ratio and a 2:30–3:00 draw-down time. See full pour over guide →
- AeroPress: Great for body-forward naturals from Brazil and Honduras. Use 88°C water, a 1:12 ratio, and a 2-minute steep for a syrupy, chocolatey result. Naturals take well to both standard and inverted AeroPress methods. See AeroPress guide →
- Espresso: Natural coffees are espresso powerhouses. The intense fruit and sweetness survive the high-pressure extraction and bloom into a rich, jammy shot. Use a coarser grind setting than you'd use for washed coffees, and aim for a slightly longer extraction (28–32 seconds). See espresso guide →
- Cold Brew: Brazilian naturals are exceptional for cold brew — their low acidity, chocolate notes, and natural sweetness translate directly into a smooth, dessert-like concentrate. Use a 1:7 ratio and steep 18–24 hours at refrigerator temperature.
- French Press: The full-immersion extraction preserves the heavy body naturals are known for. Coarse grind, 4-minute steep, and a slow press let the fruit and sweetness develop fully without bitterness. See French Press guide →
