What Is Co-Fermentation?
Standard processing — washed, natural, or honey — ferments coffee using only what's already on or in the cherry: its own sugars, its own naturally occurring yeasts and bacteria. Co-fermentation adds something else into that mix. A producer introduces a second ingredient — often fresh fruit, fruit juice, dried botanicals, or a specific cultured yeast strain — directly into the sealed fermentation tank alongside the coffee.
The added ingredient's sugars and compounds don't just sit next to the coffee — they interact with it during fermentation, feeding different microbial activity than the coffee's own natural fermentation would produce alone. The result gets locked into the bean as it dries, well before roasting or brewing ever happen.
