Pacamara is a deliberately bred hybrid, created by Salvadoran researchers in the 1950s–60s by crossing Pacas (a compact Bourbon mutation) with Maragogipe (a large-beaned Typica mutation from Brazil). The cross produces an oversized bean with a big, syrupy body and a complex, often floral or herbal cup — one of Central America's most distinctive specialty varieties.
