Pacamara Coffee

11 coffees · 7 roasters · Sorted by expert rating

Pacamara is a deliberately bred hybrid, created by Salvadoran researchers in the 1950s–60s by crossing Pacas (a compact Bourbon mutation) with Maragogipe (a large-beaned Typica mutation from Brazil). The cross produces an oversized bean with a big, syrupy body and a complex, often floral or herbal cup — one of Central America's most distinctive specialty varieties.

Frequently Asked Questions

What's the difference between a coffee variety and a coffee origin?
Origin is where a coffee is grown (Ethiopia, Colombia); variety (or cultivar) is the specific genetic strain of the Coffea arabica plant itself — like a grape varietal in wine. The same variety can taste different grown in different countries, and the same origin can grow many different varieties.
Why are Pacamara beans so much bigger than other coffee?
Pacamara inherited its oversized bean from its Maragogipe parent, a natural giant-bean mutation of Typica. The larger bean size doesn't change caffeine content, but it does change roasting — Pacamara needs a slightly adjusted roast profile to develop evenly.
