Siphon (or syphon) coffee uses vapor pressure, not gravity or a pump, to move water between two glass chambers. Heated water rises into an upper chamber to steep with the grounds, then as the heat is removed the vapor contracts and pulls the finished coffee back down through a filter — a full-immersion brew with the clarity of a paper filter and a bit of theater on the counter.

Set Up 1:00
Seat a pre-soaked filter in the bottom of the upper chamber, hooked onto the glass tube. Fill the lower chamber with 375 ml of hot water and attach the burner or butane torch beneath it.

Heat & Rise 1:30
Insert the upper chamber at an angle so it isn't airtight yet, and apply heat. As the lower chamber's water nears boiling, straighten the upper chamber to seal the two — rising vapor pressure pushes the water up through the tube into the upper chamber.

Add Coffee & Stir 0:15
Once most of the water has risen, add 25 g of grounds to the upper chamber and give it a quick stir to break up any dry clumps and saturate evenly.

Steep 1:00
Stir gently once or twice more during the steep to keep extraction even. At around the 1-minute mark, remove the heat source entirely — this is what starts the vacuum draw-down.

Draw Down 1:00
As the lower chamber cools, vapor there contracts and pulls the brewed coffee back down through the filter, leaving the spent grounds behind in the upper chamber. A full draw-down takes about a minute; a slower one usually means the grind was too fine.

Once the draw-down finishes with a distinctive gurgle, twist off the upper chamber and pour straight from the lower chamber. Serve immediately — siphon coffee's clarity fades fastest of any method as it sits.
