How much coffee do I use in a siphon?
About 24 g for a 3-cup siphon (360 ml of water) at a 1:15 ratio. Scale by roughly 1 g of coffee per 15 ml of water, or go 1:13 for a bolder cup.
What grind size is best for a siphon?
Medium to medium-coarse, like coarse sea salt. A cloth or metal filter is more porous than paper, so too fine a grind clouds the cup. See the grind size guide.
How long should I steep siphon coffee?
About 45 to 75 seconds once the water has risen and the coffee is added, then remove the heat. Longer steeps taste heavier and more bitter; shorter ones taste lighter and brighter.
What water temperature should I use for a siphon?
Around 90 to 94 C (194 to 201 F) in the upper chamber. The water cools slightly once it rises, so a gentle simmer below it is enough. See the water temperature guide.
Why does my siphon draw down slowly?
Usually the grind is too fine and is clogging the filter. A draw-down over about 90 seconds means grinding coarser or using less coffee. A quick stir right before removing the heat also levels the bed.
