From 26-year-old producer Yulisa Carhuallocllo, who placed 7th in Peru's Cup of Excellence, managing her 3-hectare biodiverse farm La Miel where honeybees aid pollination. Cherries undergo 18-hour in-cherry fermentation, then 36 hours post-depulp before drying on African beds for 25-30 days.
