From Hacienda La Papaya, produced by Juan Pena. B7 is the seventh lot on the farm, located at one of the highest areas at 2,100m. A unique mix of five varietals. Cherries are harvested, selected, cleaned, then fermented in polyethylene tanks for up to 240 hours with oxygen forced out, temperature kept below 24C. Dried in shaded rooms for approximately 30 days.
