How much coffee do I use in a Chemex?
About 40 g for a 6-cup Chemex (600 ml of water) at a 1:15 ratio. Scale by roughly 1 g of coffee per 15 ml of water, or go 1:14 for a bolder cup.
What grind size is best for a Chemex?
Medium-coarse, like coarse sea salt. The Chemex filter is about 20 to 30 percent thicker than a standard paper filter, so a V60 grind drains too slowly. See the grind size guide.
How long should a Chemex brew take?
About 3:30 to 4:30 in total, including a 45-second bloom. Faster than that usually means the grind is too coarse; slower means too fine or too much coffee.
What water temperature should I use for a Chemex?
Between 93 and 96 C (199 to 205 F) — just off the boil for light roasts, a little cooler for darker ones. See the water temperature guide.
How much water do I use to bloom a Chemex?
Pour about twice the weight of the coffee in water — roughly 80 ml for a 40 g dose — and wait 45 seconds before the main pours.
