How much coffee do I use for Turkish coffee?
About 1 heaping teaspoon (7 g) of powder-fine coffee per 70 ml demitasse cup, which is roughly 1:10 coffee to water by weight. Use more for a stronger cup and a little less for a lighter one.
What grind size is Turkish coffee?
Powder-fine, finer than espresso and close to flour. Most burr grinders cannot reach it, so use a dedicated Turkish hand mill or buy it pre-ground. See the

When do I add sugar to Turkish coffee?
Stir the sugar into the cold water with the grounds before heating. It cannot be added after brewing, which is why you choose sweetness (sade, az, orta or sekerli) when you order.
How long does Turkish coffee take to brew?
About 2 to 4 minutes over low heat, depending on how many cups you make. Slow heat builds the foam (kaymak); lift the cezve off the heat as the foam rises, before it boils.
Do I stir Turkish coffee while it brews?
Stir once, when the cold water and grounds are combined. After that leave it alone so the foam can form. Let the grounds settle in the cup for a minute before sipping.
What size cezve do I need?
Choose a cezve that holds about twice the water volume so the foam has room to rise. A 2-cup (140 ml) cezve makes one or two demitasse cups. See the
